Empanada Me Crazy

Todd and I made delicious homemade empanadas tonight. He’s been talking about empanadas that he had in Jamaica a long time ago so we decided to try making our own using the deep fryer we got as a wedding gift.

(Please excuse the awful pictures below. My iPhone camera lens is scratched thanks to Tyler. :-p)

We mixed together cooked ground beef, sautéed onions, cooked potatoes, sliced olives, Caribbean Jerk seasoning, ground red pepper, and cayenne pepper.

We bought premade empanada disks from Publix called El Sembrador.

Todd filled the disks with 2 tablespoons of the meat mixture, then folded them over and closed them sealing the edges with a fork. Using our new Profry Deep Fryer, we fried the empanadas in vegetable oil until they were golden brown.

Once they were cool enough to bite into,

we doused them with hot sauce and ate like there was no tomorrow.
