This recipe is not exactly diet friendly, but I had to share it with you because sometimes… well… you just need to eat something fattening and delicious.

It’s been cloudy and rainy and a little cool here so I made a pot of turkey chili to warm us up. And to go with the chili, my Mom cooked up some Corn Dodgers.

Stop.

Corn Dodgers?

Yes. I believe it’s a southern thing, but my Mom’s side of the family cooks and eats them regularly. It’s a simple recipe using a bag of corn meal, oil, flour, and salt.

Recipe from Mom…

 

Corn Dodgers

1 1/2 cups Stone Ground Corn Meal

2 tsp salt

flour

water

Canola or Vegetable oil

Pour the Corn Meal in a mixing bowl. Add 2 tsp salt and a pinch of flour to the Corn Meal and mix together.  Boil 3 cups water and then pour in the corn meal mixture. Stir the water and the corn meal mixture together until well blended.  Let stand for 5 minutes.  With your hands, make rolls/logs or I like to call them… Sponge Bob Patties.  Place the roll/patties in a heated pan with Vegetable or Canola Oil and fry them up, turning every couple of minutes to get the nice brown look.

Side notes: This made 5 palm size and 2 mini size for Tyler.  The recipe originally was made using Dixie Lily Cream Corn Meal, but it has been 2 yrs since they stopped selling it. Now we have had to change to Stone Ground Meal…..

We like to lather them up with generous amounts of butter.

    That looks good. I grew up eating something similar called Johnny Cakes aka Fried Dumplings. We used flour instead and milk, salt and baking powder. Might have to go make some now :-)
