Good morning friends!

 

Tyler had a rough night last night so I’m tired and I have a lot of cleaning to do today.

For breakfast this morning, I made Banana Muffins with goji berries and chocolate chips thrown in for fun.

 

Banana Muffins

2 1/2 cup whole wheat flour

3/4 t baking soda

1/4 t salt

3 ripe bananas, mushed

1/4 cup almond milk

1/4 cup agave nectar

2 eggs

1/3 cup oil

1 t vanilla

Extras – 1/4 cup chocolate chips and 1/4 cup goji berries (soaked in water)

 

 

Preheat oven to 350 degrees F and grease a muffin pan. Whisk together the flour, salt, and the baking soda. In a different bowl, mix together the mushed bananas, milk, honey, eggs, oil, and vanilla. Once thats all combined, fold the dry ingredients in. Becareful not to overmix. Pour the batter into the muffin pan and bake for 20 minutes.

They came out Fabulous-o!!

- 1 lb since last week

Can’t believe I’m still losing since I haven’t followed the diet in a few days but I’ll take it!!!
